The Dingle Distillery was founded in 2012. Oliver Hughes, founder of the Porterhouse group of brewpubs had an immovable vision to bring distilling to Dingle. When he started socializing the idea to friends and Dingle locals, many thought he was out of his mind. There was no such thing as an artisan, independent distillery in Ireland.
Yet Oliver persisted in his own inimitable way, winning over detractors along the way proving that not only could he make his dream a reality, it has turned out to be a very successful business. Sadly, Oliver passed away since, but his son Elliot proudly carries on what his father began. It describes itself as an ‘artisan’ distillery and it stands tall in a converted sawmill in Milltown on the outskirts of Dingle, in County Kerry.
At first they produced a London Dry Gin, which has become one of Ireland’s most successful gins. The water used at the distillery comes from a well 240 feet below the distillery! The botanicals for the original gin come from the locality and this prompted Master Distiller Graham Coull to produce a gin for all seasons, as the botanicals and the Dingle landscapes change. This stackable 80cl Gin is not available year round and the distillery have given us this year’s edition as a special run for Gin Box Subscribers.
This month gives you a unique chance to try the best of the gins produced at the distillery. We have included the botanicals listed for each of the gins below so that you might get to spend some time over the impending festive season enjoying all 4 different Dingle Gins!
